Roasting is a different and delicious way of cooking your vegetables. You won’t believe how easy they are to make. Put your oven on a high setting and wait for it to heat up. Chop up your vegetables and put them in an oven proof dish then coat them with olive oil. After 15 minutes remove the dish using your oven gloves and turn the vegetables so the hot oil covers them all. Put the vegetables back in the oven and they should be ready in another 15 minutes.
Great vegetables to roast are mushrooms, onions, carrots, peppers and parsnips but you can pretty much roast any vegetable.
